Chicken Packages by Junko

My mother would make this all the time when we were kids, because we always had a lot of leftover chicken. Everyone I've made this for so far has loved it, even if they weren't fans of cream cheese.

Spread out the crescent rolls but seperate only into squares. 4 crescents per square. Mix up all the ingredients in a bowl and spoon into the 4 squares. Pull up the four corners of the packages. Pinch seams together. Sprinkle tops with a little bit of bread crumbs. Bake at 400 degrees; for 15-20 minutes.

Make-Ahead Potatoes by Junko

Cook potatoes until tender and drain. Mash, add sour cream, cream cheese, butter, onion, and salt. Continue to mash until smooth.

Spread in greased casserole dish. Sprinkle top of potatoes with paprika. Bake at 350° immediately for 40 minutes covered with aluminum foil, bake another 20 minutes uncovered.

Idiot Cookies by Junko

This is a favorite of my brother inlaw, getting the timing down on the fudge boil can be tricky at first, but the ease of recipe and little cleanup makes it worth it.

Mix in a large saucepan and bring to a boil. Boil 2-3 minutes. Time this because you are essentially making fudge. If you don't do 2-3 minutes, it won't work. Take off heat and add quickly:

Mix and drop on waxed paper. Leave sit until cool and firm.

If summer, you may need to store in the refrigerator.
